Tasty ham tortilla

This versatile tortilla is great for using up leftovers - ham, cheeses and cooked vegetables like potato, capsicum and pumpkin can be added in the mix!

Servings: Makes 2-4 servings


2 tbsp olive oil
1 onion, thinly sliced
220g potatoes, cooked and cooled, cut into 1cm slices
6 eggs
100g ham, sliced
¾ cup cheddar or tasty cheese, grated
1 tsp chilli powder (optional)

Additional vegetables such as capsicum or cooked pumpkin (optional)


1 Preheat grill to 200°C.

2 Heat oil in an oven proof, medium pan and add leek, cooking for 5 minutes or until soft.

3 Beat eggs, ham and cheddar together in a small bowl. Add chilli if you’d like

4 Add potatoes (and extra vegetables if desired) to the pan, then add the egg mixture.

5 Turn to low heat and cook for 10 minutes, or until nearly set.

6 Place under hot grill for 2 minutes or until golden brown. Serve with green salad.


Tip: This tortilla is great for breakfast, lunch or a quick dinner. For lunch, serve warm thin slices of frittata on a crusty roll with a spread of tomato relish or avocado.

Variations: Include any vegies you have on hand - like grated zucchini, tomato, corn kernels, spinach pumpkin or red onion.
