Savoury baked ricotta

Creamy, delicious and easy to make, this savoury delight is perfect as a base for breakfast or lunch or as a side dish at dinner.

Baked Ricotta with Tomatoes

Servings: Makes 2 servings


Olive oil, to grease
500g fresh ricotta
2 eggs, whisked
½ cup fresh chives, chopped
2 spring onions, finely sliced
1 bunch thyme, stalks removed
1 tsp chilli flakes
1 tsp pepper


1 Preheat oven to 180°C. Grease two 1 cup capacity ramekins.

2 Combine ricotta, eggs, chives, spring onions, thyme, chilli and pepper in a bowl and combine well. Spoon into ramekins.

3 Bake in the oven for 30 minutes or until golden and set. Set aside for a further 30 minutes to cool.

Tip: Serve with roasted tomatoes and torn basil or spinach and smoked salmon for a delicious breakfast or light lunch.
