Ochazuke Japanese Green Tea Rice

For a simple and tasty way to use up leftover rice, try this traditional Japanese recipe courtesy of Asian Inspirations. It combines two of the most fundamental Japanese ingredients, rice and tea, and can be enjoyed as a light meal or as a snack at any time of the day.  


Ochasuke Green Tea Rice

Preparation & Cooking time: 10 minutes
Difficulty: Easy
Servings: Makes 4 servings

Ingredients: 1 cup cooked rice
1½ cups Japanese green tea
100g fried / baked salmon flakes
2 tsp mirin
1 roasted seaweed sheet (thinly sliced)
1 tsp sesame seeds (toasted)
1 spring onion (finely sliced)
wasabi (to taste)
Japanese soy sauce (to taste)



1 Brew a pot of Japanese green tea and set aside.
2 Microwave cold rice and divide into two bowls. 
3 Layer rice with salmon flakes, seaweed, sesame seeds, spring onion, mirin and as much wasabi as you would prefer. 
4 Pour hot brewed green tea over rice and serve immediately. 
5 Add the desired amount of soy sauce to your personal liking.
