Leftover bolognese pizza

If you've ended up with leftover bolognese, there is no better way to use it up than to smother it on a pizza base. Why not make your own quick yoghurt dough as well!

Servings: Makes 1 pizza


3/4 cup of bolognese sauce

1 pizza base (or make your own)
5 cherry tomatoes, quartered 
150g mozzarella cheese, sliced
4 tbsp grated parmesan cheese 
Fresh basil leaves


1 Preheat oven to 200 degrees Celcius.

2 Lay pizza base out on a large round tray or pizza stone (preheat pizza stone if you're using one).

3 Spoon over bolognese sauce, top with cherry tomatoes and cheeses.

4 Bake for 15 minutes or until bubbling and golden. Garnish with fresh basil and serve.


Tip: Top with additional fresh rocket for some extra greens. 

Leftovers: Store extra slices in an airtight container in the fridge and heat up for lunch tomorrow. 

Variations: To up the vegetable content, spread thinly sliced mushrooms, onion, zucchini or capsicum over the bolognese sauce.
