Ham & zucchini slice

Use up leftover ham in this quick and tasty zucchini slice.

Servings: Makes 4 servings - Can be frozen, cut into slices.


2 zucchinis, coarsely grated
1 carrot, grated
1 capsicum, chopped finely
2 spring onions
100g ham, diced
100g feta, crumbled (or grated tasty cheese)
1 cup self-raising flour
4 eggs, lightly beaten
¼ cup milk
2 tblsp olive oil


1 Preheat oven to 180°C. Grease and line a 20cm x 30cm pan, or a lamington tin.

2 Combine all ingredients in a bowl, then pour into pan.

3 Bake for 40 minutes or until brown on top, and it doesn’t wobble when moved.

4 Set aside to cool slightly, then cut into squares and serve hot or cold with a side salad.

Tip: This slice can be easily frozen by cutting into slices and freezing in a container, separating slices with baking paper.

Variation: Add any leftover cooked vegies in place of the carrot and capsicum, such as broccoli, carrot, sweet potato or frozen peas.
