Cheesy pasta frittata

This cheesy baked frittata is a crowd-pleasing way to use up leftover cooked pasta. It works with spaghetti, penne or whatever pasta you have.

Ingredients:

1 tsp oil

400 gm pasta

3/4 cup tasty cheese, grated

1 tsp minced garlic

1 medium onion, diced

1/2 cup diced ham

Salt and pepper to taste

Method

1 Preheat oven to 200°C.

2 Lightly beat eggs in a medium bowl. Add cheese, pasta, ham and season with salt and pepper and stir to combine well.

3 In an oven-proof frypan, heat oil over medium heat. Add onion, stirring until translucent. Add garlic and cook for 1-2 minutes.

4 Pour pasta mixture into the frypan and stir gently to combine, ensuring the onion and garlic is mixed throughout the pasta. Spread evenly in frypan and cook for 5 minutes over a medium-low heat.  

5 Check the base is set by lifting one edge slightly with a spatula. It should be set firm and slightly golden but not yet brown. Transfer to the oven to cook for a further 10 minutes, or until the top is set and doesn't wobble in the centre. Serve in slices, hot or cold. 

 

Tip: If you don't have an oven-proof frying pan, this recipe can be made by simply baking all the ingredients in a baking dish. 

Variations: Use any type of cooked pasta you have and add extra veggies for a healthier option, like zucchini, mushrooms or peas.
